Couldn't blame you for staying

You have good pay, good benefits, job security.
I started off my career working with government social service agencies and did the best that I could. It dawned on me that my services were worth $100,000 to the agency, of which I got $14,000.
I started applying for grants on my own, which in no way conflicted with my agency job. I even went to the director and got her permission to do this.
After a couple of years, I pulled in a $40,000 grant and left the agency to start my own consulting business. That was 25 years ago.

First, grants are very difficult to get, especially for a for-profit business.
A more feasible possibility is to get a small business loan - and even there, the loans is usually required to be secured by some type of property.
Whether you are applying for a grant or a loan, you'll need a really solid business plan.
I'd suggest you start by checking with your local community colleges to see if they offer a course in developing a plan and starting a business. A good course will also cover financing options.

I agree with you, but- it's not all that simple.

By the time you're ready to "dive in" you need to have been somewhere accountable. Putting yourself out there before you're all pro, all the time, is not a bad idea. I think it's quite important to the nurturance of the artist to practice the business long before there is a real art star career plan underway. Nurturance of the fledgling professional is viable.
You start small no matter what grade your artwork is, star quality, included. The key is (know thyself) in knowing where you are in your own artistic development. If you know you're only an inch on the final miles' path, you won't be swayed by failure or success early on
